 Chocolate Chip Zucchini Muffins

I am so grateful for this journey; for the people I’ve met (and those I have only virtually met), and for the opportunities that have come my way. I never would have imagined that my passion could grow and impact so many of you in just a short year. Today, I am thankful for all of you; for continuing to read, try recipes, and communicate with me on a daily basis. Thank you from the bottom of my heart! Now, let’s talk muffins. Seriously, these are the best way to sneak zucchini into your picky child/husband/partner/family member’s food. Grab one when you are running out the door, or for a guilt-free mid-day snack. 





Ingredients
  1. 2 cups almond flour
  2. 1 tbsp coconut flour
  3. 3 tbsp tapioca starch
  4. 1/8 tsp Himalyan sea salt
  5. ¼ tsp baking powder
  6. 3 eggs
  7. 4 tbsp raw honey
  8. 1 tsp organic vanilla extract
  9. 1/2 cup unsweetened applesauce
  10. 1 cup grated zucchini
  11. 1/3 cup dark chocolate chips
Instructions
  1. 1. Preheat oven to 350
  2. 2. Place 12 baking liners in muffin tin or simply directly on a baking sheet
  3. 3. In a mixing bowl combine almond flour, coconut flour, tapioca starch, salt, and baking powder
  4. 4. Add in eggs, honey, vanilla, and applesauce and mix well
  5. 5. Fold in grated zucchini and dark chocolate
  6. 6. Bake for 15 minutes or until a toothpick comes out clean

Pumpkin Protein Bars

 Just got done baking these amazing pumpkin protein bars!  Every once in awhile we need to spice things up with our diet and nutrition.  My grandma and I made the bars and as we speak I am sitting here with my evening cup of coffee and munching on my 4 protein squares!  YUMMO!!!

This is a great add to your morning or afternoon snack!

Nutrition Facts:
Nutrition (without walnuts): 1 square = 47 calories, .7 g fat, 8 g carbs, 3.7 g protein
Nutrition (with walnuts): 1 square = 63 calories, 2.3 g fat, 8 g carbs, 4 g protein
Ingredients:
½ C Xylitol Brown Sugar Blend (Ideal)
1 - 4 oz. jar baby food applesauce
2 tsp. ground cinnamon
1 ½ tsp. ground ginger
½ tsp. ground clove
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
2 tsp. vanilla extract
4 large egg whites
1 - 15 oz. can of raw pumpkin
2 C oat flour
2 scoops vanilla whey protein
½ cup almond milk
½ C chopped walnuts (optional)
Directions:
Preheat the oven to 350.
Spray a 9 X 13 Pyrex dish with non-stick spray.
Combine first 11 ingredients and mix well.
Add the final 3 ingredients (4, if adding walnuts), and mix until incorporated. Spread batter into the Pyrex dish and bake for 30 min.
Makes 24 squares.

SHAKEOLOGY RECIPE OF THE MONTH!
Pumpkin Spice Shakeology
½ c. pumpkin puree
1 tsp. pumpkin pie spice
½ small banana (for sweetness)

1 scoop vanilla or chocolate
Shakeology
Water and ice to blend

Quinoa & Turkey Stuffed Peppers

Quinoa & Turkey Stuffed Peppers

Ingredients: 
Water 
Sea Salt 
4 large red bell peppers (you can use any color)- make sure the peppers can sit upright nicely. remove top, ribs and seeds. 
2 cups cooked brown rice 
1 tsp extra virgin olive oil 
1 yellow onion, peeled and chopped 
1 large carrot, peeled and grated 
1 cup butternut squash, peeled and diced 
3 cloves garlic, passed through a garlic press 
2 cups fresh roma tomatoes, diced and set over a fine mesh sieve to drain 
1 15 oz can black beans, rinsed and drained 
1 cup fresh corn kernels 
1/2 cup fresh chopped cilantro 
juice of one fresh lime 
fresh ground pepper 
cooking spray 




















Preparation: 
Preheat oven to 350 degrees. Place cooked brown rice in a bowl and let cool. set aside. 
Make sure there is a rack in the middle of the oven. Bring a large pot of salted water to a boil. Place the peppers in the boiling water and cook briefly. the peppers need to be just a little soft. Remove the peppers from the water an dput them on a plate line with paper towels, upside down so the water can drain out. 

In a large skillet, heat olive oil and saute onion, carrot and butternut squash. Cook for 10 minutes, covered. Add garlic and cook a few minutes more. Now add tomatoes, beans and corn. Cook for 5 minutes. Remove from heat. 

Add vegtable mixture to cooled, cooked brown rice. Season with cilantro, lime juice, sea salt and black pepper. Mix with clean, bare hands until all ingredients are evenly distributed. Set aside. 

Prepare a small baking pan with a light coating of cooking spray. Place each of the peppers right side up in the pan. Stuff each pepper with brown rice filling. Don't pack the rice mixture too tightly. Bake for 20 minutes and serve immediately. 

You can add lean ground chicken or turkey to the cooked rice mixture to make it a complete clean eating meal. Simply brown one pound of ground chicken or turkey and add to stuffing mixture and stuff as usual. 

I also added a can of tomatoe sauce on top to give it some sauce. I used an all natural organic sauce with no added sugar! Delicious!

Raspberry Peach Iced Tea

So for those of you with unbearably cold weather, I bring you spring in a glass with this raspberry peach iced tea. It’s so fruity, so refreshing and just what you need on a cold, gloomy, thunderstormy-type day. And if that doesn’t cut it, you could always hang out with me here in Michigan with a glass of this on my front porch.







RASPBERRY PEACH ICED TEA
Prep Time2 hours
Cook Time10 minutes
Total Time2 hours, 10 minutes
Yield6 servings
This lightly sweetened iced tea is wonderfully fruity and so refreshing!
INGREDIENTS
  • 2 tea bags
  • 1 cup raspberries, plus more for garnish
  • 2 peaches, sliced, plus more for garnish
  • 3 tablespoons agave nectar, or more to taste
  • Mint leaves, for garnish
INSTRUCTIONS
  • Steep tea bags in 4 cups boiling water according to package instructions; discard tea bags and let cool.
  • Combine peaches, raspberries and agave nectar in blender until smooth; strain through cheesecloth or fine sieve.
  • In a large pitcher, whisk together raspberry peach mixture and brewed tea. Place in refrigerator until chilled.
  • Serve over ice, raspberries, peach slices and mint leaves, if desired.
