Turkey Zucchini Quinoa Casserola

- 1 lb. lean ground turkey
- 1 package quinoa/brown rice blend
- 1 chopped zucchini
- 1 chopped bell pepper of choice
- 1 can low sodium organic chopped tomatoes
- add garlic, olive oil and pepper to desired taste
- (optional) add hot sauce to kick up the heat!!!

This was sooo easy to make!!! Just cook the ground turkey in a skillet and add all ingredients to a large pan or casserole dish. Bake for 20 minutes at 400* and voila! A tasty, clean, husband approved AND 21 day fix approved meal!!!

Each serving contains approximately 1 green, 1 red, 1 yellow and 2 teaspoons. 1 serving is approx 2 cups cooked.
