Black Bean & Sweet Potato Tacos

Black Bean & Sweet Potato Tacos





These Black Bean & Sweet Potato Tacos are gluten free and vegetarian. They make a great breakfast, lunch or dinner taco recipe.

Ingredients

  • 4 cups sweet potatoes cut into 1/2-inch cubes
  • 2-3 tbsp olive oil
  • 1 small sweet onion finely diced
  • 2 cloves garlic crushed
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup refried black beans
  • 1-2 tbsp coconut oil
  • 8 corn tortillas
  • Cilantro
  • 1/2 cup Cheese *can use vegan cheese

Instructions

  1. In a large skillet place olive oil and sweet potatoes.  Cover skillet and cook over medium heat for 5-7 minutes, stirring occasionally.
  2. Add onions, garlic, salt and pepper.  Continue cooking over medium heat for 12-15 minutes, or until sweet potatoes are cooked through.
  3. In a separate skillet over medium heat, add one tablespoon coconut oil and 2-3 tortillas.  Heat up tortillas for 1-2 minutes on each side.  Remove tortillas and place on a paper towel to remove excess oil.  Repeat with remaining tortillas.
  4. For serving, fill each tortilla with 2 tablespoons black beans and equal amounts of the sweet potato/onion mixture.  Top with cheese and cilantro and enjoy!
  5. *Serving size is 2 tacos.*

Simple Vegan Dinner

Ingredients
  • 15 oz black or red beans
  • 1 ½ cups vegetable broth
  • 1 cup dry quick cooking brown rice
  • 1 tablespoon plus 1 teaspoon chili powder – divided
  • 1 ½ teaspoons cumin – divided
  • 1 teaspoon turmeric
  • 2 teaspoons ground sea salt – divided add more or less as desired
  • ½ teaspoon of ground black pepper add more or less as desired
  • 1 medium onion – chopped
  • 1 red bell pepper – removed and chopped
  • 3 cups spinach
  • 1 teaspoon of avocado or extra virgin-olive oil or 2 tablespoons of vegetable broth
  • ½ cup of chopped cilantro optional
  • Lime wedges optional
Instructions
  1. Drain and rinse the beans and put them in a medium sauce pan and cover with water. Bring to a boil at high heat, once the water is boiling reduce the heat to simmer. Add 1 tablespoon of chili powder, 1 teaspoon cumin, turmeric, and ground pepper and stir well to combine. Simmer for 20 minutes, stirring occasionally. Stir in the sea salt at the end.
  2. In a large skillet with a lid, heat the oil, or, 2 tablespoons of vegetable broth if you don’t cook with oil, on medium heat. When the oil/broth is hot, add the onion and bell pepper and sauté until tender. Pour the 1 and ½ cups of vegetable broth over the vegetables and bring to a boil. When the broth is boiling stir in the rice, cover, and reduce the heat to simmer for the amount of time directed on the package. Usually 20 minutes.
  3. When the rice is done, remove the lid, add the spinach, and put the lid back on. Let sit for 5 minutes.
  4. Use a slotted spoon (to avoid adding extra water) to add the beans to the vegetables and rice, sprinkle on the remaining teaspoon of chili powder and ½ teaspoon of cumin, and grind more sea salt and black pepper on top if desired. Fold the beans and spices into the rice and veggies until well combined. Serve with fresh cilantro and lime wedges.

Very-Veggie Cauliflower Hash Brown Breakfast Bowl

SERVES 1
  • 1/2 avocado
  • 1/2 lime or lemon
  • garlic powder, salt, and pepper
  • 2 eggs
  • extra virgin olive oil
  • 1-1/2 cups cauliflower rice
  • 4oz mushrooms, sliced
  • 1 small handful baby spinach
  • 1 green onion, chopped
  • salsa

Directions

  1. Add avocado, lime or lemon juice, garlic powder, salt, and pepper to taste to a small bowl then mash with a fork and set aside. Whisk eggs with salt and pepper in a small bowl then set aside.
  2. Heat a drizzle of extra virgin olive oil in a 10" skilletover medium heat. Add mushrooms then saute until they release their water. After the water has cooked off, season mushrooms with garlic powder, salt, and pepper, then saute until golden brown. Scoop into a bowl then set aside.
  3. Turn heat up to medium-high then add another drizzle of extra virgin olive oil to the skillet. Add cauliflower, season with garlic powder, salt, and pepper, then saute until crisp-tender, 4-5 minutes. Scoop cauliflower into your serving bowl then set aside.
  4. Turn heat back down to medium then add the mushrooms back into the skillet along with the green onions and baby spinach. Saute until spinach is barely wilted, 30 seconds, then add whisked eggs and scramble. Scoop mixture on top of sautéed cauliflower hash browns then top with mashed avocado and salsa.

Pepper Steak Stir-Fry

Pepper Steak Stir-Fry
Ingredients
MARINADE INGREDIENTS:
  • 1/4 cup liquid aminos
  • 1/3 cup water
  • 2 tablespoons rice wine vinegar
  • 1/8 teaspoon coarsely-ground black pepper (or more/less to taste)
PEPPER STEAK INGREDIENTS:
  • 1 lb sirloin steak (cut diagonally across the grain into thin strips)
  • 2 tablespoons extra virgin olive oil
  • 1/2 red bell pepper (thinly sliced)
  • 1/2 yellow bell pepper (thinly sliced)
  • 1/2 green bell pepper (thinly sliced)
  • 2 green onions (sliced and divided)
  • 2 tablespoons fresh ginger (minced)
  • 2 garlic cloves (minced)
Instructions
Marinade
  1. In a small bowl, whisk together all the marinade ingredients. Pork over sliced sirloin in a large ziplock bag. Seal the bag and shake gently to coat all the meat. Refrigerate for at least 15 minutes.
Stir-Fry
  1. Heat 1 tablespoon olive oil in a large wok or skillet over medium-high heat. Sauté the peppers and the white part of the green onions, ginger, and garlic for about 3 minutes. Remove to a plate.
  2. Add the remaining tablespoon of olive oil to the wok and add half of the marinated steak, reserving the marinade. Stir fry 2 to 3 minutes until browned; transfer to the plate. Repeat with the remaining steak; and again transfer to the plate.
  3. Pour the reserved marinade into the wok. Cook and stir until thickened, about 1 minute. Add the previously cooked ingredients and stir. Cook a couple of minutes until heated through. Add the green onion tops and give it one more stir.
  4. Serve immediately over rice, quinoa or I used cauliflower rice!

LIIFT4: Lift, HIIT, Rest, Repeat!

Beachbody Super Trainer Joel Freeman is about to release a brand new fitness program and I am so excited to fill you in on it!! This program is called LIIFT4 and is all about building lean muscle and burning a ton of calories. In just 30 minutes, you’ll burn what would normally take AN HOUR AND A HALF at the gym – and you don’t even have to leave your house(that’s my kind of workout)!!! By combining weightlifting and high intensity interval training (HIIT) with a short core routine, you are going to shred and tone your body like never before.
I am  so excited for this program and it comes at the perfect time of year- the dog days of summer when you need something quick and effective to get the job done.

How does it work?

One of the great things about this program is that you will not get bored because you will never do the same workout twice!! Plus, you will only be working out FOUR days a week and you will still be able to achieve incredible results.
The LIIFT4 program is divided into two parts: the first 6 weeks is designed to tone your body, and the last two weeks will burn through calories and fat.
The only equipment required is a set of light, medium, and heavy weights or resistance bands.

Who is it for?

Women/Men looking to sculpt and get lean, men looking to build and shred, and anyone with a baseline of fitness.

What is included?

You will get a Workout Calendar as well as a Weight Progression Tracker. The program also comes with a nutrition guide to make sure you are eating the right protein, nutrients, and healthy carbs and fats that your body needs.

LIIFT4 launches on Beachbody on Demand on October 1st, but you can gain access through the VIP Early Access Sale on June 11th which will give you access to the workouts starting on July 16th!!
